Gado Gado salad

 
For the salad

4 eggs                                                                    1 iceberg lettuce, finely shredded

2 carrots, peeled and cut into fine shavings      Half a cucumber, peeled and cut into matchsticks

 
For dressing

4 tbsp crunchy peanut butter                             Juice of a lime

1 dessertspoon honey                                          1 tbsp soy sauce

1/2 a tsp minced chilli

 

Place the eggs into cold water and bring to the boil. Cook for 10 . then plunge into cold water to cool. Shell the eggs and cut each in half lengthways. Place the salad ingredients in a bowl. Put all the dressing ingredients in a pan and heat gently, stirring until they all combine. Drizzle over the salad and serve immediately.
 
 

Broccoli Salad Recipe

 
For the salad
1 large broccoli head, cut into pieces (4-5cm)

250g Raisins ½ Diced Red Onion

8 rashers Crispy Bacon to crumble 250g Sunflower seeds

For the dressing

125g Mayonnaise
3 tbsp sugar
1 tbsp Vinegar
 
Blanch the broccoli for 1 minute and allow to cool. Grill the bacon until crisp enough to crumble. Place the broccoli in a glass bowl and add the raisins, onion and sunflower seeds. Mix together the dressing ingredients and pour over the salad. Refrigerate until required
